Thanks to a smooth cooking surface, solid out-of-the-box seasoning, fairly reasonable prices and below-average weight, Field’s classic skillet sizes are already our favorite all-around cast iron out there. It likely won’t be every day you have something compact enough to cook in it, so the little pan is not an everyday beater. But it’s not without uses — fried eggs, pot pies, cornbread, biscuits, small pies, baked ziti and, according to Field, a single filet mignon are all prime dishes to prepare in its mini-pan. Field’s No. 4 — No. 4 being a reference to vintage cast iron sizing, when skillets had to fit into pre-cut insets on wood stoves — is $75 and weighs just under two pounds. It’s available now.
