For the uninitiated, copper is probably the best commercially available heat conductor — meaning it rises and falls to desired temperatures quickly and evenly, giving the cook a more controlled cooking experience. Stainless steel, for its part, is the superior material for searing food and, more importantly, is far more durable than copper.
