One of the World’s Best Chefs Wants to Sell You Better Seeds

Dan Barber continues his march into a better and more sustainable food culture.

The next crusade Dan Barber — the Michelin-starred chef behind Blue Hill and Blue Hill at Stone Barns — will take on is the seed industry. And, unsurprisingly, his promise is not that of mega-sized tomatoes.

Row 7 is a new seed company that combines Dan Barber’s kitchen and flavor mastery with longtime collaborators and seed and growing experts Matthew Goldfarb and Michael Mazourek. The goal is to breed for seeds that aim first at powerful flavor, then at growth performance and volume.

The first batch of future veggies available on Row 7’s site includes beets, koginut squash, habanada peppers, potatoes, and experimental varieties of butternut squash and cucumber.
