According to Wüshof Chairman Harald Wüsthof, the new Aeon collection is “designed for the chef who has a passion for form and function.” It’s also for someone with a lot of extra cash on hand, but if you can splurge on it, you won’t be disappointed. The knives — a chef’s knife, serrated knife and santoku knife — use high-carbon stainless-steel blades that are coated with Diamond-Like Coating, or DLC. The DLC adds a black-ish tint to the blade that is more than just for looks — it also has superior scratch-resistance and protects the blade from liquids, acids and starches. The cherry on top of the whole thing is the handle made from 3,249-year-old Scandinavian bogwood, because if you’re spending $600 on a knife, you pull out all the stops.
