The 10-and-a-half-inch squared cast-iron skillet isn’t as iconic as the traditional circle, but it’s every bit as functional — particularly at cooking more pieces of bacon and pork belly. There’s one key difference to keep in mind with the squared version — season it upside down. All bare cast iron needs to be regularly seasoned, of course, but the squared version has corners that act as little hangout spots for oil to coagulate and pool — resulting in uneven, ugly and ineffectual seasoning.
